Pasta Primavera

This is one of my all-time favorite recipes.  It's absolutely delicious and WAY healthier than any cream sauce!  The best part is that it's really simple to make, very inexpensive, and it tastes delicious for lunch the next day!


This recipe is adapted from Giada De Laurentiis.  It calls for bow tie pasta (Farfalle) but I chose penne instead.  I also didn't have any zucchini in the house when I made it this particular time.  It's great though, so I try not to forget it anymore!  I also don't use the reserve liquid.  It's just preference, but I prefer the taste of the olive oil to be strong.

It's delicious served warm, but don't hesitate to serve it as a cold pasta salad on these warm summer days.  Either way, it's the perfect pasta dish! Pin It
